The senior food microbiologist provides technical expertise for the company’s facility environment and manufacturing process compliance for food safety, as well as other internal and external service such as performing process validation, chemical risk assessment, helpline data management, customer database FSQA request management. The role is also responsible for interpreting and disseminating sensitive technical information, the management, storage and reporting of this data to the senior management level of Quality Assurance & Food Safety. The role ensures conformance of the manufacturing sites to various internal, external and state/federal regulations with regards to biological, chemical, physical quality and safety. The role will interface between the Category Quality Assurance & Food Safety Directors and manufacturing site Quality Assurance & Food Safety Managers to ensure the quality and consistency of systems through regular auditing and feedback to all parties.


Manufacturing process food safety compliance:

  • Design and conduct manufacturing process preventive control validation study, to ensure compliance with FDA FSMA, USDA FSIS, or state/local requirements. Capable of using mathematical predict modeling and carry out inoculation study for such validation.
  • Provide technical recommendation and guidance on monitoring, verification activities, and supports facilities with validation documentation and/or scientific literature.
  • Assess new hurdle technology capabilities to support manufacturing and product shelf life requirement.
  • Support internal QMS inspection with update manufacturing food safety and/or regulatory requirement.
  • Conduct internal/external facility food safety/microbiological inspection if needed.
  • Capable to design and develop food safety programs, to meet federal, state or local regulatory requirement.
  • Serve as subject matter expert on regulatory requirement from FDA, USDA, state or local, assess policy update and its impact to plant manufacturing process, work collaboratively with other departments to change and adapt accordingly.
  • B.S. in Microbiology, Food Science or related field and minimum 5 years' relevant experience in food preparation/food industry OR M.S. in Microbiology, Food Science or related field and minimum 2-3 years' relevant experience in food preparation/food industry.
  • In-depth knowledge of food microbiology, chemistry, product development, food safety controls, manufacturing processes, sanitation principles, cleaning chemical material, material specifications, Good Laboratory Practices, auditing, troubleshooting, food spoilage, food-borne illness and procedures used to control the microbiological quality of food and microbiological testing procedures. Familiarize about RPC system is preferred. 
  • Excellent interpersonal skills, critical thinking and decision making, demonstrate the ability to work independently or as a member of a team.
  • Demonstrate knowledge and experience in food safety with in-depth knowledge of HACCP and FSMA compliance to microbiological safety standards. Prefer HACCP certified or PCQI.
  • Demonstrate lab management skills, such as media preparation, rapid methods testing and FDA BAM/ AOAC methods.
  • Have in-depth understanding of the key scientific principles associated with microbiology, chemistry, physical contamination, as related to food safety.
  • Have people influencing, critical thinking and decision-making skill, capable of conducting root cause analysis, corrective actions, and trouble shooting.
  • Ability to travel regularly (25% - 50% of time).
